There’s something special about recipes that are passed down through the family. ❤️
My Polish aunt taught me how to make these comforting stuffed cabbage rolls, and they quickly became a household favorite.
Tender cabbage leaves are wrapped around a savory mixture of ground meat, rice, onion, egg, and seasonings, then slowly cooked in a rich tomato sauce until everything is tender and flavorful.
Known in Poland as gołąbki, stuffed cabbage is a classic Polish home-style dish. Traditional versions commonly combine cabbage leaves with rice and minced meat and are served with tomato or mushroom sauce.
🥬 Polish Stuffed Cabbage Rolls
Ingredients
For the cabbage rolls:
- 1 large green cabbage
- 1 lb (450 g) ground beef or a beef-and-pork mixture
- 1 cup cooked rice
- 1 small onion, finely chopped
- 1 egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- ½ teaspoon dried marjoram, optional
For the sauce:
- 2 cups tomato sauce
- 1 cup crushed tomatoes
- 1 cup beef or vegetable broth
- 1 tablespoon tomato paste
- 1 teaspoon sugar, optional
- Salt and pepper to taste
👩🍳 How to Make Gołąbki
1. Prepare the cabbage
Bring a large pot of water to a boil.
Carefully remove the core from the cabbage and place the whole head into the hot water.
As the outer leaves soften, gently remove them with tongs and place them on a plate.
Continue until you have enough large, flexible leaves.
2. Make the filling
In a large bowl, combine:
- Ground meat
- Cooked rice
- Chopped onion
- Egg
- Garlic
- Salt
- Pepper
- Paprika
- Marjoram
Mix everything until well combined, but don’t overwork the meat.
3. Roll the cabbage
Place one cabbage leaf flat on a cutting board.
Add a small portion of filling near the bottom of the leaf.
Fold the sides inward and roll it tightly into a neat parcel.
Repeat with the remaining cabbage leaves and filling.
4. Prepare the sauce
Mix the tomato sauce, crushed tomatoes, broth and tomato paste in a bowl.
Season to taste.
Pour a little sauce into the bottom of a large baking dish.
5. Arrange the rolls
Place the cabbage rolls seam-side down in the dish.
Pour the remaining tomato sauce over the top.
Cover the dish tightly with foil.
6. Bake until tender
Bake at 350°F (175°C) until the cabbage is tender and the meat is completely cooked.
Because the filling contains ground meat, don’t rely only on its color to determine whether it’s done. USDA recommends cooking ground beef, pork, lamb or veal to 160°F (71°C) measured with a food thermometer.
7. Serve ❤️
Let the rolls rest for a few minutes before serving.
Spoon plenty of tomato sauce over each roll and serve warm.
🇵🇱 A Classic Polish Comfort Food
Gołąbki are more than just cabbage rolls—they’re a classic example of Polish home cooking.
There are many regional variations, and traditional fillings can include different meats, rice, buckwheat or other grains. Some versions use fresh cabbage, while others use fermented cabbage leaves.
And like many family recipes, there isn’t just one “correct” version.
That’s part of what makes them so good. ❤️
💡 My Favorite Tip
Make a large batch and save some for the next day.
Traditional sources note that gołąbki can taste even better on the second or third day, after the flavors have had more time to develop.
