A classic Hungarian dessert made with soft vanilla meringue islands floating on silky homemade vanilla custard. Known as Madártej, meaning “bird’s milk,” this nostalgic dessert is light, creamy, and incredibly delicious! 🤤❤️

🛒 Ingredients
For the vanilla custard:
- 1 liter (4¼ cups) whole milk
- 6 large egg yolks
- 120 g (½ cup + 2 tbsp) granulated sugar
- 1 tbsp cornstarch
- 2 tsp vanilla extract
- 1 vanilla bean, optional
- Pinch of salt
For the meringue islands:
- 6 large egg whites
- 100 g (½ cup) granulated sugar
- Pinch of salt
For serving:
- Ground cinnamon, optional
- Caramel sauce, optional
👨🍳 Instructions
1️⃣ Make the vanilla milk
Pour the milk into a large saucepan. Add the vanilla and heat gently until hot but do not let it boil.
If using a vanilla bean, split it lengthwise and scrape the seeds into the milk.
2️⃣ Prepare the meringue
Beat the egg whites with a pinch of salt until they begin to foam.
Gradually add the sugar and continue beating until the mixture is thick, glossy, and holds stiff peaks.
3️⃣ Cook the “islands”
Keep the milk just below a simmer.
Using two large spoons, scoop portions of the meringue and gently place them into the hot milk.
Cook for about 1–2 minutes per side, carefully turning them once.
Remove with a slotted spoon and place on a plate.
Repeat until all the meringue is cooked.
4️⃣ Make the custard
Strain the warm milk if necessary.
In a bowl, whisk together the egg yolks, sugar, cornstarch, and a pinch of salt until smooth.
Slowly whisk in a little of the hot milk to temper the eggs.
Pour the mixture back into the saucepan.
Cook over low to medium-low heat, stirring constantly, until the custard thickens enough to coat the back of a spoon.
⚠️ Do not boil, or the egg yolks may scramble.
Remove from the heat and stir in the vanilla extract.
5️⃣ Assemble
Pour the vanilla custard into a large serving bowl or individual dessert dishes.
Carefully place the fluffy meringue “islands” on top.
Sprinkle with a little cinnamon if desired.
6️⃣ Chill and serve
Refrigerate for at least 2 hours before serving.
Serve cold, with plenty of creamy vanilla custard surrounding each fluffy meringue island. 😍
🇭🇺 Traditional Hungarian Tip
For the most authentic Madártej, keep the custard smooth and relatively thin rather than making it as thick as pastry cream. The contrast between the cold vanilla custard and airy meringue islands is what makes this dessert so special.
😋 Enjoy!
Creamy, delicate, vanilla-scented, and wonderfully nostalgic—Hungarian Madártej is one of those desserts that looks elegant but uses very simple ingredients. 🇭🇺❤️
