These golden, crunchy Walnut Phyllo Rolls are inspired by rolled baklava: delicate phyllo pastry wrapped around a fragrant walnut-cinnamon filling, baked until beautifully crisp, then finished with a sweet lemon syrup. Rolled baklava is a well-established variation of traditional baklava.

🌰 Ingredients
For the rolls
- 12 sheets phyllo dough, thawed
- 2 cups finely chopped walnuts
- 3 tbsp granulated sugar
- 1 tsp ground cinnamon
- ¼ tsp ground cloves, optional
- ½ cup melted unsalted butter
- 1 tbsp breadcrumbs, optional
For the syrup
- 1½ cups granulated sugar
- 1 cup water
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp honey, optional
The combination of walnuts, cinnamon, phyllo and sweet syrup is characteristic of baklava-style pastries, while the rolled format makes individual portions especially easy to serve.
👨🍳 Instructions
1. Make the syrup
Add the sugar, water and lemon juice to a saucepan.
Bring to a boil, then reduce the heat and simmer for about 10–15 minutes, until slightly thickened.
Stir in the lemon zest and honey if using. Remove from the heat and allow the syrup to cool completely.
2. Prepare the filling
Mix the chopped walnuts, sugar, cinnamon and cloves in a bowl.
For a slightly lighter filling, you can add a tablespoon of breadcrumbs to absorb some of the butter.
3. Assemble the rolls
Preheat your oven to 375°F / 190°C.
Place one phyllo sheet on your work surface and brush lightly with melted butter. Place another sheet on top and brush again.
Spread some walnut filling along one edge.
Fold the sides slightly inward and roll the pastry firmly into a cigar-shaped roll.
Repeat with the remaining phyllo and filling. Keep unused phyllo covered with a clean, slightly damp towel so it doesn’t dry out.
4. Bake
Place the rolls seam-side down on a buttered baking tray.
Brush the tops generously with the remaining melted butter.
Bake for approximately 30–40 minutes, or until deeply golden and crisp. Rolled baklava recipes commonly bake until the phyllo becomes golden and crisp.
5. Add the syrup
Remove the hot rolls from the oven.
Pour the cooled syrup evenly over the hot pastries and allow them to rest for at least 30 minutes so they can absorb the syrup.
For the crispiest result, don’t drown them in syrup—add enough to flavor and sweeten the rolls while preserving the flaky texture.
✨ To serve
Arrange the rolls on a large platter and sprinkle with finely chopped walnuts or pistachios.
Serve at room temperature with Turkish coffee, Arabic coffee or tea.
🔥 Pro Tips
- Keep phyllo covered while working because it dries very quickly.
- Don’t overfill the rolls; too much filling can make them difficult to roll.
- For extra crispiness, brush the finished rolls generously with butter before baking.
- Make the syrup ahead of time so it has time to cool.
- The contrast between hot pastry and cooled syrup helps the pastry absorb the syrup while maintaining its texture.
