👨🍳 Instructions
1️⃣ Prepare the dough
Mix the flour, powdered sugar, and salt in a large bowl.
Add the cold butter and rub it into the flour mixture until crumbly.
Dissolve the yeast in the cold milk, then add it together with the egg yolks.
Knead until you have a smooth dough. Divide into 4 equal portions, cover, and let rest for about 30 minutes.
2️⃣ Prepare the fillings
For each filling, heat the milk and sugar in a saucepan until the sugar dissolves.
Remove from the heat and mix in either the ground walnuts or poppy seeds.
Add vanilla, lemon zest, and cinnamon to the walnut filling.
Allow both fillings to cool completely.
3️⃣ Roll and fill
Roll each piece of dough into a rectangle.
Spread the filling evenly over the dough, leaving a small border around the edges.
Roll tightly into a log and place seam-side down on a baking tray.
4️⃣ Create the traditional shiny crust
Brush each roll with egg yolk and allow it to dry.
Then brush with egg white and allow it to dry again. This helps create the beautiful traditional cracked marble pattern on Hungarian Bejgli.
5️⃣ Bake
Preheat the oven to 350°F (180°C).
Bake for approximately 30–35 minutes, until beautifully golden brown.
Allow to cool completely before slicing.
😋 Enjoy!
